- 4 medium zucchini, cut into fry-shaped sticks
- 1 cups all-purpose flour
- 4 large eggs, beaten
- 1.5 cups panko breadcrumbs
- 0.7 cups grated parmesan cheese
- 2 teaspoons Italian seasoning
- 1 teaspoons garlic powder
- 1 teaspoons salt
- 0.5 teaspoons black pepper
- 2 olive oil spray
- 1 cups marinara sauce, for dipping
STEPS
- Set up breading station: Set up a breading station with 1 cups all-purpose flour in one bowl, 4 large eggs, beaten in a second bowl, and a mixture of 1.5 cups panko breadcrumbs, 0.7 cups grated parmesan cheese, 2 teaspoons Italian seasoning, 1 teaspoons garlic powder, 1 teaspoons salt, and 0.5 teaspoons black pepper in a third bowl.
- Bread the zucchini: Dredge each zucchini stick from 4 medium zucchini, cut into fry-shaped sticks in the flour, then dip in the egg, then coat evenly in the breadcrumb-parmesan mixture, pressing gently to help it stick.
- Preheat air fryer: Preheat the air fryer to 400°F (204°C) for 3 minutes.
- First cook: Arrange the breaded zucchini fries in a single layer in the air fryer basket, spraying lightly with 2 olive oil spray, and cook for 8 minutes.
- Flip and finish cooking: Flip the fries, spray lightly again with 2 olive oil spray, and cook for another 4-5 minutes, until golden brown and crispy.
- Serve: Serve immediately with 1 cups marinara sauce, for dipping for dipping.

NOTES
Pat the zucchini sticks dry before breading to help the coating stick better and avoid sogginess. For extra crispiness, avoid overlapping the fries in the basket, and cook in batches if needed. These are best eaten fresh, as zucchini fries can soften if left to sit too long.
