  • 0.7 cups vegan mayonnaise
  • 2 celery stalks, finely diced
  • 0.5 cups red onion, finely diced

  • 2 tablespoons fresh lemon juice
  • 4 tablespoons fresh dill, chopped
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 4 sandwich bread slices or lettuce leaves, for serving

Mash the chickpeas: Add 4 cans chickpeas, drained and rinsed (15 oz each) to a large bowl and mash with a fork or potato masher until mostly broken down but still a bit chunky.2
